WATCHING: Hannibal, Psych, + Re-runs of Desperate Housewives… I’m patiently waiting for summer shows like Pretty Little Liars and Big Brother to start!!!

LISTENING TO: Big Band + Swing Music while dancing around the house, like a mad woman!

LEARNING: I am slowly teaching myself spanish. Hopefully one day I can immerse myself into the spanish culture and truly learn the language.

READING: The Explicit Gospel by Matt Chandler- I just really got into it, but so far I am loving it and learning several new things about myself and the world around me.

EATING: Trying to eat healthy and on a budget so I have ground my gears to come up with recipes that are super affordable for a family of two that doesn’t eat crap!

Life, styled- Cozy summer days!

The hot weather has officially rolled in and I am loving it. Spending my days in sundresses and shorts, picnic-ing with the hubs, and snacking on delicious fruit are some of my favorite ways to spend those lazy summer days. This is my go-dress for this weather. It’s perfect for shopping, to throw over a swimsuit, or to even lounge around in like a sloth.DSC_0157 DSC_0164

DSC_0166 Here I paired it with some vintage boots that I scored at an auction! I absolutely in love with them and they will probably make several appearances in the future. I also decided to wear one of my favorite scarves from Target and an Old Navy bag. I choose to wear what makes me happy. When shopping pick pieces that no matter how many times you wear it you feel great in it. Which of your summer clothes are waiting to be refreshed this summer? DSC_0168

Currently…

me and my d
Hello everyone! I hope your year has started off as wonderful as mine has. The holidays wore me out and I have been pretty busy with upcoming projects, so I apologize for not posting in so long.
One of my favorite blogs Mama.Papa.Bubba. recently began doing “currently” posts and I thought that it would be a fun way to get to know me and whats going on in the Bray household recently.
WATCHING: I must admit, we have had too many late nights lately. All spent watching great shows like Cheers, Frasier, Big Bang Theory, and Biggest Loser. TV is personally one of my guilty pleasures.

LISTENING TO: Lana Del Rey- I love love her right now, can’t get her songs out of my head, and I have had her station on Last.fm for days!

PLAYING: It has been all work no play around here lately, but I am looking forward to a date night with my hubby to listen to a good local band play.

TALKING ABOUT: Different ways to get back into dance again. Are there any dancers out there wishing to get back into it? How are you doing it? I simply must dance. I love it and my city just doesn’t have what I’m looking for when it comes to dance.

READING: It is no secret that I love to read. So, now there are about 5 books on my nightstand.. and I am definitely in the middle of reading them all. They range from Religious books to health and beauty books.

EATING: Recently tried a restaurant in the area called Chimi V’s. I had the burrito bowl with fajita meat and have had a craving for it ever since. It is most definitely worth a try if you are ever in Shreveport/ Bossier. I will be recreating the burrito bowl in a future blog post because it was so yummy. Stay tuned for that!

Zesty Mexican Soup!

I am always up to try a healthy recipe and when I found this mexican soup recipe on whfoods.org I thought it would be perfect for my family to try. It was pretty easy to make with the help of my hubby (he’s so much better at chopping things up than I am). The soup tasted fantastic and it is made from all natural ingredients. One serving has 62.9 % of the daily value of vitamin C, and 43.8% of the daily value of vitamin A. It also gave you high percentages of fiber, iron, and magnesium.

We are really bad at eating leftovers, so we froze the rest, and ended up popping them back out of the freezer a couple of days later, because we missed that taste (You will understand when you try it). I could swear it got better the second time around. :)

Prep and Cook Time: 40 minutes

Ingredients:

1 med. onion, minced

4 med. onions, chopped

2 tbsp. red chili powder

3 cups and 1 tbsp. chicken or veggie broth

1 sm. to med. green bell pepper, diced into 1/4in. pieces

1 sm. zucchini, diced into 1/4 in. pieces

1 cup finely chopped collard greens

1 15oz. can (BPA free) black beans, rinsed

1 cup frozen yellow corn

1 4oz. can (BPA free) diced green chili

1 tsp.. dried oregano

1 tsp. ground cumin

1/4 cup chopped pumpkin seeds

1/2 cup chopped fresh cilantro

salt and pepper to taste

Directions:

1.) Heat 1 tbsp. broth in a medium soup pot. Healthy saute onion, garlic, and green peppers in broth over med. heat for about 5 min., stirring often.

2.) Add red chili powder and mix in well. Add broth and tomatoes. Cook for another 5 min. and add beans, corn, green, chili, oregano, and cumin

3.) Bring to a boil on high heat. Once it begins to boil, reduce heat to medium low and simmer uncovered for 10min. longer. (Simmering uncovered enhances the flavor.)

4.) Add zucchini and collard greens and cook for 5 more minutes. Add chopped cilantro, pumpkin seeds, salt and pepper.

1 serving= 1 cup

1 cup = 203 Calories

You may end up cooking some things longer depending on how tender you like your zucchini and greens. We also sprinkled ours with corn chips.
